Primo was created by Bim Dietrich, one of the most respected restaurateurs in Louisville’s history, whose 30-years experience is highlighted by the resounding success of Dietrich’s in Crescent Center and Allo Spiedo.
According to Bim, Primo represents in many ways a combination of Dietrich’s, which was not Italian, and Allo Spiedo, which was, complete with the traditional wood fired oven. Primo’s warm, comfortable atmosphere combines both contemporary and antique features. The building housing Primo was built in 1885 and provides diners with an intriguing blend of turn of the century American architecture with traditional Italian features, including Italian glass fixtures.
“We have a wood fired oven, like in Europe,” Bim said, “and we create an authentic Italian thin crust pizza.”
Primo focuses on regional Italian cooking, offering the most eclectic blend of traditional and contemporary Italian fare available in Louisville. The menu, which Bim changes every week, is inspired by the tratorrias and osterias of Italy.
Mouthwatering entrees offered the week this edition of TravelHost went to press include: Ravioli con Asparagi – house-made black pepper ravioli with asparagus spring pea & sun gold tomato butter; Costoletta di Agnello - grilled lamb loin chops with porcini & rosemary mustard, cherry tomato & arugula salad; and Gnocchi Della Casa – house-made ricotta gnocchi with wild mushroom ragout ricotta salata & garlic chive garnish.
“We’re an Italian restaurant where the food is authentic,” Bim said. “You don’t replicate ingredients that are from Tuscany, you interpret them and we do that. Our food is 100% Italian and we try to present authentic regional flavors representing the entire peninsula.”
Primo is one of the anchor establishments in the East Market Gallery district, one of downtown Louisville’s most creative urban areas and the heart of Louisville’s arts community.
